Vegan Irish Potato Soup

With St Patrick’s Day here, it’s time to let your Irish shine with a creamy and delicious vegan Irish Potato soup. May the luck of the Irish be with you!

Vegan Irish Potato Soup

Ingredients

  • 1 tablespoon olive oil
  • 5 oz can coconut milk, full-fat
  • 1 onion, diced
  • 1 stalk celery, diced
  • 6 garlic cloves, minced
  • 2–3 lbs. potatoes, peeled and cubed
  • 4 cups vegetable broth
  • ½ teaspoon Sunwarrior Sea Salt
  • ¼ teaspoon black pepper

Toppings

  • Vegan sour cream
  • Bacon TVP
  • Vegan cheese
  • Chopped green onions
  • Parsley

Directions

Heat oil in large pot. Sauté onion, garlic, and celery until onions are translucent. Add potatoes and vegetable broth. Bring to a boil, then simmer for fifteen minutes. Add coconut milk, salt and pepper. Use a potato masher to break up the potatoes and create a smoother creamier texture. Top with your desired toppings and enjoy!
